This colorful and tasty dish is the specialty of the land of Spain.
The Spanish call this fried rice the “paella”. The paella originated from the Muslims (or Arabs) in the region of Valencia, on the east coast of Spain in the 15th century. At first, this dish was simply stewed rice with fish, vegetables and some spices (quite similar to porridge). By 1840, a newspaper had for the first time published a paella recipe. And by the end of the 19th century, this dish was popular enough to become the national food of Spain.

How to cook paella fried rice
Ingredients: For 4-6 people with a 40cm diameter pan
– 500g of rice
– 200ml olive oil extract – 450g chicken – 150g sliced pork – 1 tbsp paprika – 1 pinch of saffron – 8 tbsp crushed tomatoes – 200g green beans – 3/4 cup peas – 1 red bell pepper, finely chopped – 15 mussels – 6 large shrimps – 6 cups (1.5 liters) of liquid for cooking the rice: chicken broth with mussels broth and salt.
How to do it:
Step 1: Boil the mussels. As soon as the mussels opened their mouths, picked the mussels out. Keep the broth to cook rice. Remove the residues.
Step 2: Add olive oil to the pan and heat it on medium heat. Sprinkle some salt into the pan to keep the cooking oil from splashing. Cook the shrimp for a few minutes, then take them out.
Step 3: Continue to add chicken and pork to the pan to fry. Add the bell peppers and cook for 2-3 minutes. Take the fried chicken, pork and bell peppers out and put on a plate.
Step 4: Quickly add the peas and green beans to the pan and fry them for a few minutes. Add the tomatoes to the middle of the pan and fry for 2 minutes. Add chili powder and mix well. After 1 minute, add the fried chicken, pork to the pan, stir it all.
Step 5: Add 1.5 liters of water with saffron and a pinch of salt to the pan. Mix well and cook for 18 minutes. If needed, add a little more water.
Pay attention to use the appropriate amount of water so that the rice does not become mushy.
Turn off the heat, leave the fried rice in the pan for about 5 minutes before enjoying it. Usually, many people like to eat this dish when it is still in the pan.
